David Baird is a skilled and talented winemaker who has devoted years to perfecting his craft in the vineyards of California’s Central Coast. He holds a winemaking degree from Cal Poly San Luis Obispo. He has gained extensive experience by working at various locations across the Central Coast, honing his skills and expertise to an exceptional level.
In 2015, David became a part of Folktale Winery, which was still in its early days and needed a unique identity centered around producing high-quality, terroir-driven wines. David’s creativity played a critical role in shaping the winery’s approach to winemaking.
At Folktale Winery, David has embraced and applied old-world techniques such as whole cluster fermentation, lower sugar/higher acid grapes, and native fermentations. These techniques have resulted in a fresh and innovative approach to winemaking that sets Folktale Winery apart from others in the region.
